I had made up our weekly meal plan and then, darn it, melskitchencafe goes and intices me again with this Potato Soup recipe!! While the weather outside is sunny right this minute, it is expected to drop 20 degrees before dinner time and there is even a chance on white stuff to fall from the sky!! Huh??
So in my attempt to stay warm and cozy, I decided warm and creamy soup is the way to go!!!

Knee Deep into Fall!
I love seasons...I think that is why I love living in the mid-west, we see seasons, the changes in the outdoors, and it just makes me happy! We are into fall here at our house....Granted the high is to be 73 today (and Friday it could be 78!) Indian Summer is ok with me too!
C and I made a plan to make oodles of pumpkin muffins today, no matter what! I made 2 dozen 8 days ago and the family ate them in 3 days.....Breakfast, with lunch, snacks etc.....They are a hit! So we made another 2 dozen today along with a pound of bacon for breakfast this week! (Time saver tip! I usually make a pound of bacon on Sundays to give the boys all week long at breakfast to give them some protein in the morning, but we were busy this weekend!)
Those of you that "know" me, know I do not bake....Nope, I am a cook, and measuring is NOT my thing....Baking to me (and my boys) is using a box mix and adding some other items (as per the directions!) Our favorite pumpkin bread "mix" is from Trader Joes

Like the box says...Just add eggs, oil and water...Now that is baking to me! :)
My kids love it, as do M and I! We even add a few chocolate chips to the tops to make it "better" (as per J & C).
We are off from school for a long weekend so we have some fall fun planned. A trip to a pumpkin patch, perhaps apple picking too and we are working on crafting more pumpkins for our indoor and outdoor decor! I have recently become addicted to Pinterest and have been inspired by some of the things I have found. My hope is that we can make some fun new things to add to our decor without breaking the budget!

Just can't get enough

Tonight's meal is a favorite of mine, but I am going with her version instead! Quick-and-tasty-cheesesteak-subs
I love cheese steaks...I should have been born in Philly, but in Chicago we change the toppings, use less juice etc. I am sticking to her recipe 100% tonight......We will have to compare later!
While I was searching her site (again) I came across this too....Menu's! And not just for one week but FIVE!!! Oh my, the meals and the NOT repeating meals! I gotta work on this. Sure, we have our ol' standards that I whip out for the kids (or when mommy is not motivated) but for a set 5 weeks of meals, the ease!
How far out to do you plan your meals? One week? Two? FIVE WEEKS??

Always looking!
I love to look at blogs that help me organize my life, my family, my house etc.
I am a huge believer and fan of Cozi and the amazing online calendar, list maker and articles! We live by it and weekly, if not more, I reference it for something. We have it on our phones, we print out the monthly calendars, I make lists on it, I text M reminders from it. It has truly made our family commitments so much easier to handle.
I am also a huge fanstalker of iheartorganizing. Jen is amazing and inspirational and there is not a week that has gone by that I have not found SOMETHING on her site that has not motivated me to better our home, or lives. While I might be a silent fan, I still read all of her articles and then plan to do them on my Cozi calendar! Hello, organized???!!!!???
Jen's latest post on getting lunches ready for school has be ready to tackle a new lunch making routine. I have made out 30 minutes each Sunday on the calendar to prep for lunches! I have some bins ready, I have shopped, I have lists of lunch ideas prepped and I am ready to roll out yet another genius organized routine for this family!

Yum! New dinners!
So now that I have been home for more than a week and I have learned to live in the real world with a real kitchen again, I am back to one of my favorite pastimes....Looking for recipes!! I have found many that I have added to the "must try file" in my recipe binder but this one popped out at me this morning and I have decided I am changing the meal plan for tomorrow night and we are having this!!!
BBQ Macaroni Salad
*Note: For a less meaty version, you can leave out the kielbasa entirely. Alternately, you can substitute many different types of meat for the kielbasa: deli ham, smoked sausage, etc.
I am telling you, I am craving it! Granted I have been having a lot of cravings for BBQ lately.....I could eat it all the time, I love the smoky flavor and the sauces! :)
Try it! We are and I am sure it will become a new go to meal for us!!
BBQ Macaroni Salad

8-12 ounces turkey kielbasa, diced
1 pound elbow macaroni
1 red bell pepper, seeded and finely chopped
1 celery rib, finely chopped
4 green onions, sliced thinly
2 tablespoons cider vinegar
1 teaspoon hot sauce
1 teaspoon chili powder
1/8 teaspoon garlic powder
Pinch of cayenne pepper
1 cup low-fat mayonnaise
1/2 cup BBQ sauce
1 pound elbow macaroni

1 teaspoon hot sauce
1 teaspoon chili powder

In a large nonstick skillet, heat 1 teaspoon canola oil over medium heat until shimmering. Add the chopped turkey kielbasa and cook until browned, about 5 minutes. Transfer the meat to a paper towel-lined plate and let it cool slightly before using in the recipe.
In a large pot, bring 4 quarts of water to a boil. Add 1 tablespoon salt and the macaroni and cook until nearly tender, about 6 minutes. Drain the pasta in a colander and rinse with cold water until cool, draining again briefly. Transfer the moist pasta to a large bowl.
Stir in the kielbasa, bell pepper, celery, green onions, vinegar, hot sauce, chili powder, garlic powder, and cayenne pepper. Let the pasta sit for about 5 minutes to absorb the flavors. Stir in the mayonnaise and barbecue sauce. Season with salt and pepper to taste and serve. The salad can be covered and refrigerated for up to 2 days. Check the seasonings before serving and stir in a few tablespoons of warm water before serving, if needed to bring the salad back to it’s creamy texture.I am telling you, I am craving it! Summer Lovin---Havin a Blast!
Summer break left me with little time to blog...Sorry....All 3 readers! LOL
Besides the fact that we left our home in mid-July for almost a month to spend at our summer house, we got a lot of pool time and fun in before that!
C & J painted gifts for M and my dad for father's day in the gorgeous sun! It was easy too! Some cheap canvas boards, paint and brushes! They were very excited about it....So much they took their shirts off!!
For Father's Day we went to an antique car show close to home. The boys loved all of the cars, but this one was great since the owner let them sit in it!!!!! A 1963 Austin Cooper!
Once again my parents hosted a 4th of July parade party! (Perks of living on the parade route!) and some of our closest and best est friends came to celebrate the 4th with us. Later, some of them joined us for our annual BBQ and then we headed off to fireworks! Such a great day!
And the boys (4 of them, 2 obviously are NOT mine) had a blast at a park honoring all of the American wars. Although the kids enjoyed the history, the tanks that they could climb on was a way bigger hit. I think I sat on a bench for 2 hours letting them climb!
Those were our fun highlights., besides hitting the pool every day that it was sunny! Sure there were some not so fun moments too...like losing power for 56 hours in June, then again for 36 hours in July. NOT FUN, but grateful for a friend who loaned us her generator saving our groceries and letting me try to cook "generator style"!!!
I have lots to catch up from our summer vacation at the cottage too.....Stay tuned....

WOW! NEW FAVORITE CAKE!
Mocha Chocolate Icebox Cake
To celebrate Father's Day and kick off my birthday week, my mom made this for dessert from the Barefoot Contessa! SO YUM!!! This is rich, but the leftovers will be calling my name tomorrow for breakfast I am sure!2 c cold heavy cream
12 oz mascarpone cheese
1/2 c sugar
1/4 c kahlua
2T unsweetened cocoa powder
1t instant expresso powder (my mom skipped this as we do not like coffee tasting things!)
1 t vanilla extract
3 8oz packages of chocolate chip cookies (she used enteman's boxed cookies)
shaved semi sweet chocolate for garnish
In a bowl combine (with mixer) heavy cream, mascarpone, sugar, coffee liqueor, cocoa powder, and vanilla. mix on low to combine, and raise speed until it forms firm peeks.
To assemble cake, arrange cookies flat on a 8inch spring form pan, covering the bottom as much as possible (she broke cookies to fill in gaps). Spread the mixture on top (evenly), place another layer of cookies, add more mixture until full, ending with a layer of cream on top.
Cover and put in fridge overnight.
Run a small sharp knife around the outside of the cake and remove the sides. Sprinkle with shaved chocolate, cut in wedges and serve...........
~~~It did not look as pretty as the Contessa's version, but OMG......YUMMO!!!!!!!

Change of Plans
While our weekly meal plan says "Paninni's" for dinner this evening, I was just reading mel's kitchen cafe and saw today's recipes and decided I HAD TO HAVE IT...TONIGHT! Yum-O! Nothing says comfort food like a knock off Olive Garden recipe and my take on their famous bread sticks!
I love Mel's site. Each day she has a new recipe to offer up. I put them into my own categories: 1) MUST TRY NOW (like tonight's change of plans!) 2) Will try in the next meal plan rotation 3) Print it and we will see if we try it. I am not crazy to think I can try every recipe but sometimes I print recipes to try, one day, maybe at the cottage or when friends and I get together to cook.
Now, even though I linked the recipe, I am posting in here so I have it online and easy to find until I print it out!
Tuscan Garlic Chicken
I would say this recipe is right on the edge of just having enough sauce but not an overabundance, so if you like things on the saucier end of the spectrum, feel free to double that part of the recipe.
*Serves 4-6 (depending on if you are serving adults or kids)
3/4 cup all-purpose flour
1/2 tablespoon salt
1 teaspoon pepper
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
4 boneless, skinless chicken breasts
5 tablespoons extra virgin olive oil, divided
1 tablespoon finely minced garlic (about 4-5 cloves)
1 red bell pepper, cut into thin strips or chopped
1/2 cup low-sodium chicken broth
6 ounces fresh spinach
1/2 cup heavy cream
2 teaspoons cornstarch
1 cup lowfat milk
1 cup freshly grated Parmesan cheese
1 pound fettuccine
Preheat the oven to 350 degrees F.
In a shallow pie plate or similar dish, combine the flour, salt, pepper, basil and oregano. Dip each chicken piece in the flour mixture until both sides are well coated.
In a large 12-inch nonstick skillet, heat 3 tablespoons of the olive oil over medium heat until the oil is hot and shimmering. Carefully place the chicken breasts in the pan, cooking them for 2-3 minutes on each side, until they are golden and browned but not cooked all the way through (they’ll finish up in the oven). Don’t scoot the chicken around once you lay it in the hot oil! Let the oil work it’s magic to sear the crust on the chicken. If you get all antsy and try flipping too early and/or moving the chicken around the pan, the breading is lightly to fall off. Gently remove the chicken to a foil-lined, lightly greased baking sheet and bake in the preheated oven for about 15 minutes, until the chicken is cooked through. Set aside and tent with foil until ready to use.
While the chicken is cooking, heat a large pot of water to a boil and add the noodles, cooking until al dente.
Also, wipe out the skillet with a couple paper towels and return it to medium heat, adding the remaining 2 tablespoons olive oil. When the oil is hot, add the garlic and bell pepper, sauteing for 2-3 minutes.
Stir in one tablespoon flour and stir constantly while cooking for another minute. Add the chicken broth to the skillet and bring the mixture to a low simmer, whisking constantly, until slightly thickened, about 3-4 minutes.
In a small liquid measure, whisk together the cornstarch and cream. Add the spinach, milk and cream mixture to the skillet. Bring the mixture to a simmer and cook, stirring occasionally, until the spinach is wilted and sauce is slightly thickened, about 2-4 minutes. Stir in the Parmesan cheese.
When the pasta has finished cooking, drain and return it to the pot. Toss the pasta with half of the cheese sauce. Place some of the coated pasta on each plate. Top with a breaded chicken breast and spoon some of the sauce over the top of the chicken and pasta. Serve immediately.

Funny how one thing changes a meal
This past Christmas I asked M to buy me some new pans for gifts. I was specific in what I wanted, clipped out photo's gave him stores to go to etc. I was overly thorough for these things. I did not want to be stuck returning them after the holidays.

I really did not "have to have it" but really wanted it. I loved seeing grill marks on the TV cooking shows I watch. I wanted THAT look! And C loves the lines on his grilled cheese! (So my boy looking at the small details of food!)I also asked for this

And I find myself using it DAILY! It cleans up beautifully, is a great weight and for health reasons I rarely have to use oil in the pan for cooking on it. I love love love it!

I wanted it for when I make smaller batches of my award winning (yes, award winning---3 times thank you very much.....from the neighborhood Chili Cook Off!) This just had a cute factor to it and was not as deep as the pot I had been using. It is a great pot for smaller dishes as well.
M came through on all three! He did exactly what I had asked (basically bought them online with the links I provided! ha!). I love them all.
Now, I am dreaming of more cookware, but these have helped my addiction collection! I am dying for one of these

But the price tag is a little steep for me (even though we have a LeCreuset outlet close by) and really it is because I love the colors it comes in. Chili cooking would be turned into an art form with that baby!
It is amazing how in 10 years of married life that I never really looked at my cookware (that my mom bought me when I moved into my first apartment!). I still use all of the pieces, the function well, and were not cheap. She (like me) invested in good cookware. But now, as I delve more into cooking meals, cooking healthy and spend more time in my kitchen I want better cookware. Not because it will make my meals better (except for the amazing grill marks on grilled cheese) but because I think that when you like what you are doing, with what you are working with, you will try harder. I try each night to make dinner just a little better. I try to make it different, and pretty on the plate. I try to make it healthier, but filling. I try to let my family know that this is just another way of me saying I LOVE YOU.

Day Off
No school for the kids today, and it is rainy and gray. It has been a lazy morning around here with the boys watching a movie and playing games while mommy makes phone calls regarding the Harlem Wizards event in April.
While I do love lazy days, it does not mean that chores can become a low priority. Laundry is piling up, the the house is hardly tip top. Tonights dinner is a favorite for all of us...After looking at the weeks calendar it is a busy week, so a yummy dinner tonight will make up for the quick meals for many nights this week!
Chicken Puffs
2 c cooked, diced (or shredded chicken)
3/4 pkg of cream cheese softened
2T bread crumbs
4T melted butter (divided)
1 cup finely chopped mushrooms (canned or cooked)
1 pkg of crescent rolls
Mix, chicken, cream cheese, bread crumbs, 2T of butter and the mushrooms.
Unroll the crescent rolls, and divide them according to the lines on them.
Take a crescent (triangle) and a heaping spoonful of the mixture and place it on the bottom of the triangle. Roll up the sides and then roll into a ball. Do with the remaining rolls and mixture.
Baste the tops of rolls with remaining butter.
Bake at 375 for 11 - 15 minutes until golden brown, and serve
I use any other veggie have in the house too....Have used asparagus, broc, cauliflower, whatever we have on hand! I often used leftover chicken in this recipe too. I start a container at the start of the week and dump cooked chicken leftovers in it. Then by the end of the week I have enough chicken for the recipe!

Raffle Mania
Happily J's school Raffle is almost upon us! (36 hours and counting...literally!) Between the baskets, the packaging, the descriptions, the volunteers, and the little "things" that need to be done, me and my faithful friend / co-chair are seeing a light at the end of the Raffle tunnel. Our biggest goal for this event is to make sure everyone has fun and we raise a lot of $$ for school!
With that said, the family has been warned of the chaotic week I have, and have been patient and supportive (thank goodness!). They get to enjoy the event while I work it so there is fun involved for them at the end of all of this chaos! J is armed with a list of things he wants to win, C wants to run around in the indoor obstacle course and M, well he gets to be the chaperon for the kids since I will be busy.
These are just some of the things that have been residing in my living room for weeks!
As much work and griping I give this event (and this is the 2nd year I am co-chairing it) at the end of it, it is fun. I enjoy the creative side of making the baskets and the signs. I love to see the students at school get amped up when they see me deliver another load of prizes. I like the fact that I am helping out at J's school getting to know all of the staff and teachers. I never did this to become "that over involved mom", I did it to be a part of something that could help the school my kids will attend. I believe helping the school is important for my kids and the kids that will attend there one day. This is my last year chairing this event, but not my goodbye to helping out. Between the Wizards event and being the VP of fundraising for the PTO for one more year, my active role in the school will still be there. But it is time to let something go for me and my family. I cannot imagine not doing something, but scaling back is a must for us.
With that said, the family has been warned of the chaotic week I have, and have been patient and supportive (thank goodness!). They get to enjoy the event while I work it so there is fun involved for them at the end of all of this chaos! J is armed with a list of things he wants to win, C wants to run around in the indoor obstacle course and M, well he gets to be the chaperon for the kids since I will be busy.

I can happily announce that dinners and household chores have not been neglected. Dinners have been on the easy side, and no new ones have been tried this week, but that is OK. It's our week of favorites or the ones that I know are fast and easy with little prep time! No one has gone hungry! Even laundry (which I would easily forget if I could) has been done and put away (the worst chore EVER). As much work and griping I give this event (and this is the 2nd year I am co-chairing it) at the end of it, it is fun. I enjoy the creative side of making the baskets and the signs. I love to see the students at school get amped up when they see me deliver another load of prizes. I like the fact that I am helping out at J's school getting to know all of the staff and teachers. I never did this to become "that over involved mom", I did it to be a part of something that could help the school my kids will attend. I believe helping the school is important for my kids and the kids that will attend there one day. This is my last year chairing this event, but not my goodbye to helping out. Dinners to try
We love Mexican around here. It does not have to be Cinco De Mayo for me to make a fiesta out of dinner...So here is what I am whipping out tonight for dinner!
Mexican Chicken Casserole

Mexican Chicken Casserole
- 6 cups pulled white chicken meat
- 24 ounces Mexican blend shredded cheese, divided in half
- 2 bunches green onions, tops only, chopped, divided in half
- 2 – 10 3/4 ounce cans cream of chicken soup
- 1 – 4 ounce can green chilies, chopped
- 3 cups sour cream
- 1 cup pitted black olives, sliced
- 12 – 6 inch flour tortillas

Comfort Food

I love artichokes! They are so delicious! And interesting to look at.
Tonight's dinner is a huge hit at our house! And since we obviously need some comfort food while weathering "snowmegaddon" is going on, I thought it would be perfect!
Artichoke Chicken
2 T olive oil
3 garlic cloves, minced
2 to 3 cups of cooked chicken (I used shredded)
2 cans of cream of chicken soup (do not dilute)
1 c mayo (the real thing, not low fat, fat free etc)
1 t lemon juice
1/8 t cumin
1 1/2 c shredded cheddar
1 c bread crumbs
1/4 c grated Parmesan
2 T butter, melted
In a bowl, combine artichokes, oil and garlic, place in a well greased 2 1/2 qt baking dish. top with chicken. combine soup, mayo, lemon juice, and curry in a bowl well. pour over chicken. sprinkle with cheddar.
combine bread crumbs, Parmesan cheese, and butter. sprinkle over top. bake, uncovered at 350 for 30 - 35 minutes or until bubbly.....
This is great leftover the next day. M loves to take it to work with his lunch, he says it sticks to his ribs until he comes home for dinner!

Over, so let the clean up begin
What a weekend! The party was a lot of fun! The kids LOVED it, C had a blast, the parents came for pizza and drinks while the kids played even longer...And you know it is a good night when we all look at our bottles of wine that were consumed (7 in total) then our watches and say "HOW DID IT GET TO BE 9:30pm!???"
I started with the mini prep tour in the last post but here is the rest....
I made the banner with left over scrapbook paper and the LEGO font I know cherish so much! I did not put C's name on it so I can re-use it for J and even M's birthday!
They played well and M and I started whispering to guests that there were 2 buckets in the house that needed guesses for a prize. The kids quickly ran about (one was upstairs and one was downstairs) to get guesses in! The little ones who could not write got help from the bigger kids or M and I.
Then we split the kids into two teams and gave each team a bin of LEGOS. Each bin had the same amount of LEGOS in it (same shapes etc) and the teams had 10 minutes to build the tallest tower. This was hard for the littler ones since the big kids "took over" but they held their own.

And what kids party is complete without a bar? LOL This was before the kids arrived, there was beer and white wine chilling in the kitchen!
So the kids promptly arrived and played LEGO's until everyone was settled. They all enjoyed creating and showing off to M and I!

The kids played, and created amazingly well until pizza time and when the adults arrived. Some had to bolt but more came for pizza and cake.

Now, it is not perfect, but I did it myself and I am pretty proud of myself! And it was REALLY YUMMY! (and I am still dining on it for breakfast!) C loved it!
Late into the night the kids that remained helped C rip into gifts....
C was really nice about letting the kids help him open! I was very proud!
And this is what the basement looked like at 10:30 that night....
Over all, C had a great day, it was fun to plan and execute and everyone just enjoyed being together on a winter evening! That is how I love to entertain! No fuss, friends and fun.....

All about C
I feel like I talk about C a lot on this Blog already...It must because he is home with me all the time (besides those lovely days when he has school for 2.5 hours!) Big brother J is just as amazing as C in a different way. J is very thoughtful but manipulative in a six year old way. Since we are knee deep in the LEGO party to come J is feeling a little jealous it is not all about him. This is a conversation we had last night at bed time.
J: Mom, when can we start working on my Birthday party?
Me: Well, your special day is not until May so we have time. What do you want to have as your theme?
J: I do not know. But C is getting all this stuff and I want it too.
Me: I know J but his birthday is in the winter, he cannot have an outdoor party like you AND it's right after Christmas so it is harder to plan something.
J: I wish my birthday was in January.
Me: WHY? I love spring and summer parties. They can be outside so we are not cramped in the house. Plus we have a great yard for them. We can do a LEGO party for you, just outside.
J: REALLY? But it would be for 7 year old's, not babies right?
Me: Well, C is turning 4 so everything is for littler kids, but I can change it up for your birthday.
He seemed happy after that.....And then 10 minutes later he said "Mom, I am going to dream of a party idea tonight and get back to you." Get back to me? This is not a business venture dear J! It's a party!
I will report, J did not get back to me this morning, but we have time. May seems so far away to me right now.

C and I are off of birthday plans today (although we did buy the cake mixes and frosting today). We have other "things" to do. Anyone have any tips on making canned frosting a true ROYAL blue with food coloring? Baby blue is not an option (nor is it a LEGO color!)

So baker friends, let me know how to get THAT color......The birthday boy is insisting it be "BLUE, MOM, BLUE! It's my favorite color!"

Only Wednesday?
Those are the words M left me with this morning..."It's ONLY WEDNESDAY!?" I know, I cannot believe it. I seriously think since November and December flew by for me I will be burdened with a slow, cold and snowy January. Perhaps February could warm up a little and come March, I will begin my packing for my hot vacation to the desert at the end of the month. I need March to get here ASAP.
I have literally nothing planned for today. I have given myself a "free day" (like a free period in high school). I have plenty of "things to do" but I may or may not get to them. I am ok with that since I have a planned free day. I have poly urethane to put on M's nightstand and then to add the new handles, I have my nightstand to sand, prime and paint. I have birthday party plans to make up, I have laundry. I will go with the flow and see what I want to do. C has school today so I really do have some free time, but I am thinking more along the lines of watching "Oprah" (I mean come on, it's her farewell season and I live in Chicago!).
So friends, make sure you plan yourself a free day soon too. I see myself cuddled in a blanket soon with my cookbooks and my recipes finding new creations for us to eat or I see myself with my stack of magazines looking for more inspiration for this house. Whatever it is that I do, I am free to do what I want! I like that....A LOT....

Busy Busy Busy
When I made out the list for Monday (last night ofcourse!) I did not think it would be that long....then I made the list.....Who am I kidding? When all four of us are home for the weekend, Mondays are always my catch up day! At least J & C have school so I have 2.5 hours to catch up alone!
On a good note, we spent the morning at a home improvement store yesterday and I found a brown paint for the dresser / nightstand for M. It is a great chocolate brown color and I love it! I got it painted and have to put the new handles on it and it will be done! The other nightstand needs some TLC and M offered to assist me (yea! I love help!) An even better note is that we found a sage green color I like, maybe even love, for the master bedroom! It is hard to love a paint chip so when we see it on the walls I will decide if it is love! But the two chips (the brown for the nightstands and the green for the walls) look great together! (Yes I will post photo's soon enough! It's only 7:42am!)
On our travels as a family yesterday we drove by a bunch of antique stores too! I mentioned to M that I wanted to check them out, but we have 2 melting kids in the back so we plan to make another visit to them. I would love to find some kind of inspirations or treasures for the room (knowing full well the budget for this extreme makeover is minimal!)
As for a follow up, the short ribs dinner was DEVINE! A lot more work and time was used than I expected but we loved every bite. I learned a few things too....
1) Have your butcher cut off as much FAT as possible off the meat. It was a fatty piece of meat so that was one negative.
2) The sauce really does reduce a lot more than I expected (and it was SO yummy!). I felt I had to keep an eye on it the last hour of cooking so the meat did not dry out. I kept spooning it on top of the meat!
3) I could do this in the crock pot! :)
4) This will be a great "we are having company and I want to impress them" meal.
Hopefully I get my list complete while I am sans - kids to finish up the nightstand, then work on the pantry too! Photo updates to follow!
Happy Monday friends! Snow is headed our way tomorrow......3 - 5 inches! I see the crock pot coming out tomorrow to make a pot roast for us to eat while we watch the snow!

Hello Friday, what took ya so long?
How come when your on "break" for two weeks, that the first week back to real life seems to DRAG? I swear I was stunned when we hit Christmas and I was still living in November! Now we are in full on slow motion and well, I do not like it one bit.
The weekend has little "fun" planned. Sadly Mommy has some volunteer meetings to attend for Jack's school on Saturday so my afternoon is really shot. But I suppose I could say it will be great quality time for my 3 boys to have together. I do have a new dinner planned with it's leftovers being straight to my non-cook friend T around the corner. She does not cook...AT ALL....I mean her middle son actually asked her this summer "if she could pour? Like Milk mom? Can you even pour milk?" She can pour, she can even warm up, but ask yourself to dinner at her house, and her hubby J cooks it all! And as a rule of thumb we NEVER, and I mean NEVER, pass up a dinner invite when J is cooking. He is amazing! Hell, we will even cancel on you if they invite us over!
But I went off topic.....My new dinner is short ribs. I told T about it and her response was "Oh, I do not eat food that I have to eat with my hands". I told her these are not "rib RIBS" these are cooked in a wine sauce, the meat will fall off the bone etc. She does not buy it. So today while buying the short ribs, I bought one extra, just for T! Then she'll understand and want me to make more for her!
The rest of the weekend will be me, cleaning up, perhaps sanding more and priming even more than I did yesterday. Home Depot was a bust as they had no sample sizes of the paint colors I wanted. I will try another Home Depot this weekend. I did not have it in me. There is plenty to do, but with this Chicago weather, I would like nothing more than a cozy movie day / weekend on the couch.....Since I have children, I have not done that is well, 6.5 years to be exact....Oh to dream about it!

Turkey Meatballs
So last year we went and visited a childhood friend, Karrie and her husband Jamie for a night. They live close enough to go from one night and the boys LOVED going. Karrie made an amazing Italian dinner for us that has not become a family FAVORITE!
Giada De Laurentiis' Turkey Meatballs! I make a bunch and freeze them so we have them on hand for easy dinners later in the month too! This recipe makes about 3 dozen meatballs depending on the size you make them.
1/4 c plain dried bread crumbs (I use whole wheat bread and put them in the Cuisnart to make my own!)
1/4 c chopped flat leaf parsley
2 large eggs, lightly beaten
2 T whole milk
3/4 c grated Parmesan Cheese
2/4 t salt
3/4 pepper
1 lbs ground turkey (I use the Jennie-O brand, the leanest you can buy!)
1/4 extra virgin olive oil
5 C Marinara Sauce (see my notes later on that!)
In a large bowl, stir together the bread crumbs, parsley, eggs, milk and 1/2 the cheese, salt and pepper. Add the turkey and gently stir to combine, but do not overwork the meat. Shape the meat into bite size balls.
In a large skillet, heat oil over a medium / high flame. Working in batches, add the meatballs and cook without moving or turning the meatballs, until brown on the bottom(about 3 minutes). Turn the meatballs over and brown the otherside, about another 3 minutes. Continue to cook until all sides are brown.
NOW....If you want to freeze some, let them cool, COMPLETELY and put them in a zip lock bag. I store about 6 - 8 per bag so I have a few meals for the future.
If you are continuing with dinner, add the marinara sauce to the meatballs and bring the sauce to a boil and reduce to a simmer for about 5 - 10 minutes. Serve with pasta (we use whatever we have in the house!) and lots of Parmesan cheese!
As for the sauce to use....We have debates around here about that. Giada makes a good sauce, but in a pinch Karrie (and now me too) agree that Emerils Marinara that you can buy at the grocery store is JUST as good as hers (and easier!) I do make a "cheaters sauce in large batches for my freezer as well...it's super easy!)
My Cheaters Sauce
2 large cans of pureed tomato sauce
1 can of petite diced tomatoes
1 jar of roasted red peppers
1T of red pepper flakes
1 pkg of frozen spinach (defrosted and drained well)
1 package of button mushrooms, diced, and sauteed
Salt & Pepper

Lists and Loves
Since my 2011 resolution list was short (why commit to so much when I could fail???) I decided to simply make a list, not a a commitment and better yet, if I do not finish the list I will not feel guilty! I get most of my list is done during the colder months because I play too much during the summer at the pool, at our cottage or here in our neighborhood. I would rather not be bogged down the lists during the warmth! Its good to be busy in the winters of Chicago...It keeps you warm!
So, in my efforts to "redo" the bedroom, I have been searching the internet for ideas, inspirations etc. I have come across some AMAZING sites! Like Ana White! Um, hello, the woman is a handmade furniture genius and really making me think I could do some of her projects! I have a list on her site already! I may have to borrow M's truck to start picking up lumber soon!
One of my other "list" items is to cook more, and that is a no brainer since I love to cook. My goal is 1 - 2 new meals a week. Easy or hard, when time permits. I am so relaxed in my kitchen that this is not going to be a hard one for me. Tonight's dinner (which I will post later) is an Italian dish that we love! M is thrilled I am pulling it out tonight!
C and I are hoping to get a move on here soon to head out on a few simple errands and a trip to Home Depot for some paint ideas. He loves that place, thank goodness! Toss him some Mickey Mouse paint cards and he is good for 15 minutes. At least I have some ideas on paint colors for the dresser / nightstands.
